The Magical Properties of a Cookie

I would like to introduce you to a friend of mine. In fact, a friend of many. 

It is the chocolate chip cookie. 

A simple cookie, semi-sweet chocolate and butter. I will tell you how a simple cookie changed my life.

My husband and I met 7 years ago. I invited him over for some chocolate chip cookies on the pretext that we would study for our exams. (We were not even in the same class.) He came over, along with some beer and the rest is history. We finished school, made some cookies. We went on vacations, with cookies in tow. We changed apartments, houses and cities, all the while making chocolate chip cookies. We had ups and downs, we adopted a cat, more trips, new jobs, more cookies.

One day it came time to get married. Of course, a traditional invitation was not our style. We did not want to be stuck to every fridge from here to there. We did something different. We sent out our wedding invitation video (below) unable to contain our cookie obsession.

Of course, now we have a new cookie in the oven. That cookie has been baking for about 34 weeks now. We are so excited to see this cookie as he/she will undoubtedly change our lives - just like that first batch of cookies. 

I am thankful for the magical properties that can be held in a single cookie. I am thankful that my husband found someone willing to whip up a batch of cookies for him in minutes. I am thankful that he makes sure to keep butter in the fridge. We are both thankful that cookies could bring us together and keep our hearts and bellies full.

​This is the simplest of recipes, adapted surely from the side of a chocolate chip packet some time ago. The key is to make them with love, underbake, and not to eat them all in one sitting.

Magical Chocolate Chip Cookies 

Preheat oven to 350 degrees Fahrenheit.
  • 1/2 cup butter, at room temperature
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups chocolate chips

  1. Cream butter and sugars. Add and mix in eggs and vanilla.
  2. Add flour, soda, salt mixture. Mix until just incorporated. 
  3. Mix in chocolate chip cookies. 
  4. Make evenly sized and spaced balls on cookie sheet
  5. Bake 8-12 mins, until light golden (almost undercooked).

Take with milk or tea, in moderation.

You found the secret to THE Michael Blundon.....he would eat the chocolate chips if they were in the pantry....he had me put them in banana nut bread (instead of nuts), pancakes and of course cookies. For someone that doesn't eat junk food....he really loves chocolate chips! Mommy, I'm sure your new little one will love them too!!! Love you two!! Hugs!
